Make it at Home: Pico de Gallo a.k.a. Salsa Fresca

Oh so delicious and amazingly easy to make. The weather here in Oregon is actually beginning to warm up,  with that comes my cravings for fresh snacks and this has become one of my new favorites. Honestly, I used  to just buy the stuff that you can find in the little plastic containers in the produce section of the grocery store but ever since I made my own I cannot find one that compares. It only takes a few fresh ingredients and a couple of minutes to prepare, so lets get on with it!

Pico de Gallo (Salsa Fresca) Recipe

4 small tomatoes (I used little Romas)
3/4 of an onion
2 jalapenos (seeded)
3-4 cloves of garlic
1/2 of a lemon
1/2 of a lime
1/2 tsp salt
a few sprigs cilantro (optional)
pepper to taste


Dice tomatoes, onion, jalapenos, garlic, and cilantro and mix in a medium sized bowl. Add salt, pepper, and
juice from the lemon and lime. Mix thoroughly & serve. (P.S. it's great right after you make it but it's best after about 24 hours when the flavors have had a chance to marinate).

Feel free to alter this recipe as needed/wanted. Adjust the amount of any ingredient to your liking. You could add fruit (like mango, YUM). It's so versatile. 

  • Want it hotter? Simply leave the seeds in the jalapenos and/or add some more cilantro.

  • Want it milder (or maybe you are one of those people who just really can't stand cilantro)? Leave out the cilantro - I promise it'll be just as good. 

So easy, so good, just do it! I seriously love this stuff. In fact, I am eating some right now as I write this post. I just can't keep my hands off it. Not only is it fantastic by itself but it is wonderful on top/ inside burritos and such, and also mixed into guacamole.
